Rhubarb--a member of the buckwheat family--is a great source of fiber, so it helps ease constipation. Rhubarb stalks contain about 2.5 grams of fiber in a 1-cup serving--about as much as a small bran muffin--which adds the bulk necessary to keep you regular.
Another reason to eat rhubarb? Research also suggests that
rhubarb may help lower cholesterol.
Remember, only the stalks of rhubarb are edible; do not eat the leaves or roots.
Rhubarb leaves contain oxalates, which have been reported to cause poisoning when ingested
in large quantities.
